iOS4: Pros
-Runs almost all apps in the app store
-Native Folders (tweakable)
-Supports ios4 tweaks
-Reminders notifications

Cons:
-SLLOOOOOOWWWWWWWW

iOS3: Pros
-FAST
-Supports wintersled
-Manual multitasking (so you dont manually need to quit apps)

Cons:
-A lot of apps are dropping 3.x support
-Some tweaks need ios4 or newer

I've two iPhone 3g's

My main : iPhone 3g with WD v4.4.1 because:

it is fast,

cool tweaks like wallpaper,

wintersled.

My second iphone on iOS 4.2.1 is just for games and apps to play..
